{"id":12749,"date":"2022-10-26T11:23:00","date_gmt":"2022-10-26T04:23:00","guid":{"rendered":"https:\/\/www.ciputra.ac.id\/cbz\/?p=12749"},"modified":"2022-11-03T09:08:52","modified_gmt":"2022-11-03T02:08:52","slug":"ice-cream-dan-gelato-apa-bedanya-ya","status":"publish","type":"post","link":"https:\/\/www.ciputra.ac.id\/cbz\/ice-cream-dan-gelato-apa-bedanya-ya\/","title":{"rendered":"Ice cream dan gelato, apa bedanya ya?"},"content":{"rendered":"<p>Gelato berdasarkan bahan yang digunakan dan metode pembuatannya sebenarnya serupa dengan es krim, namun perbedaanya terletak pada persentase dari setiap bahan dasar yang digunakan (Latifah, 2015:1).<\/p>\n<p>Berikut adalah perbandingan antara gelato dengan es krim:<\/p>\n<ol>\n<li>Gelato mengandung 6%-8% <em>butterfat<\/em>, sedangkan es krim mengandung 10%-16% <em>butterfat<\/em> (Kopfer, 2009:14). <em>Butterfat<\/em> adalah lemak yang terdapat dalam produk olahan susu atau <em>dairy<\/em> (S\u00f8rensen <em>dkk<\/em>, 2009:185).<\/li>\n<li>Kandungan udara dalam gelato lebih sedikit dibandingkan es krim. Jumlah udara keseluruhan yang terperangkap dalam gelato disebut dengan <em>overrun<\/em> (Clarke dalam Latifah 2015:1). Cara perhitungan <em>overrun<\/em> menurut Goff dan Hartel (2013:16):% <em>Overrun<\/em> = [(<em>volume of product<\/em>&#8211;<em>volume of mix<\/em>) \/ <em>volume of mix<\/em>]\u00d7100 Nilai <em>overrun<\/em> gelato berkisar 25%-40% (Goff dan Hartel, 2013:442), sedangkan es krim memiliki nilai <em>overrun<\/em> berkisar 25%-100% (Goff dan Hartel, 2013:21).<\/li>\n<\/ol>\n<ol start=\"3\">\n<li>Efek dari kandungan <em>butterfat<\/em> dan udara yang lebih sedikit adalah gelato memiliki tekstur yang lebih padat dan lembut dibandingkan es krim.<\/li>\n<li>Lemak yang banyak dalam es krim dapat menutupi rasa asli dari bahan perasanya, sehingga pada gelato yang lemaknya lebih sedikit, memiliki rasa yang lebih menonjol dan intens dibandingkan es krim (Pearce dan Zechin, 2010:11).<\/li>\n<li>Gelato disajikan pada temperatur yang lebih tinggi dan diproduksi dalam skala yang lebih kecil dibandingkan es krim (Marshall dalam Latifah 2015:1).<\/li>\n<\/ol>\n<hr \/>\n<pre><span style=\"color: #800080;\"><strong>Penulis: Michael Ricky Sondak, Natasya Santosa (CBZ 2016)<\/strong><\/span><\/pre>\n","protected":false},"excerpt":{"rendered":"<p>Gelato berdasarkan bahan yang digunakan dan metode pembuatannya sebenarnya serupa dengan es krim, namun perbedaanya terletak pada persentase dari setiap bahan dasar yang digunakan (Latifah, 2015:1).
