Kita semua sudah pernah mendengar tentang <em>bungeo-ppang<\/em>, <em>garlic cheese bread<\/em>, dan <em>salt bread<\/em> (<em>sogeum-ppang<\/em>). Namun belakangan ini, <em>cake<\/em> bernama <em>butter tteok<\/em> mulai ramai di berbagai media sosial seperti Tiktok dan Instagram. <em>Butter tteok<\/em> terbuat dari tepung beras ketan, dan teksturnya <em>crispy<\/em> di luar namun lembut di dalam. Apakah kalian penasaran mengapa teksturnya bisa seperti itu?<\/p>\n<p>Untuk menjawab pertanyaan itu, Program Studi Food Technology Program Universitas Ciputra (FTP UC) Surabaya mengadakan <em>workshop<\/em> membuat <em>butter tteok<\/em> pada tanggal 24 April 2026 (<strong>Gambar 1.<\/strong>). <em>Workshop<\/em> tersebut dihadiri oleh siswa-siswi dari berbagai SMA di Surabaya, dan dibimbing langsung oleh ibu dosen Muliasari Kartikawati S.TP., M.Sc., Ph.D., yang akrab disapa Ibu Lia, dalam membuat <em>butter tteok<\/em>. Sambil membuat, Ibu Lia juga menjelaskan konsep sains pangan yang terlibat dalam pembuatan <em>butter tteok<\/em>.<\/p>\n<p>Ibu Lia menjelaskan bahwa tekstur <em>crispy<\/em> dari bagian luar <em>butter tteok<\/em> berasal dari proses pemanggangan pada suhu tinggi (200 \u00baC). Proses ini menyebabkan bagian luar dari <em>cake<\/em> mengering lebih cepat dibanding bagian dalamnya, sehingga menciptakan <em>crust<\/em> yang <em>crispy<\/em>. Selanjutnya, beliau menjelaskan bahwa bagian dalam <em>butter tteok<\/em> yang lembut disebabkan oleh proses bernama gelatinisasi, dimana pati dalam tepung beras ketan mengental dan kemudian memadat akibat panas. Seberapa lembut tekstur bagian dalam <em>butter tteok<\/em> dapat dipengaruhi dari cara mencampurkan bahan-bahan menjadi adonan.<\/p>\n<p>Untuk mengujinya, kelompok siswa laki-laki diminta untuk mengaduk menggunakan <em>mixer<\/em>, sedangkan kelompok siswa perempuan mengaduk menggunakan <em>whisk<\/em>. Hasilnya? Tekstur <em>butter tteok<\/em> dari kelompok laki-laki lebih lembut dibandingkan dengan <em>butter tteok<\/em> dari kelompok perempuan (<strong>Gambar 2.<\/strong>).
