Rujak Juhi atau yang disebut juga dengan nama Mie Juhi menggunakan bahan utama Juhi, yaitu hewan laut sejenis sotong yang dikeringkan. Sotong sendiri sering disalahtafsirkan sebagai cumi-cumi, dalam kenyataannya cumi dan sotong berbeda. Sotong sendiri merupakan makanan utama di wilayah Mediterania dan Asia Timur. Sama seperti seafood lainnya, sotong kaya akan kalsium dan protein. Berdasarkan penelitian yang dilakukan oleh Hiroki University di Jepang, tinta cumi-cumi dan sotong mempunyai kegunaan mengaktifkan sel-sel darah putih untuk memerangi tumor.<\/p>\n<p>Beberapa orang mungkin mengira Rujak Juhi hanya disantap sebagai selingan saja. Atau bahkan ada yang belum pernah mencicipi Rujak Cina peranakan ini? Ya, nama Juhi sendiri berasal dari Bahasa Cina, karena dahulunya Rujak Juhi ini banyak disukai oleh masyarakat Cina. Kemudian tradisi makan Rujak Juhi ini diteruskan oleh masyarakat Betawai sampai akhirnya menjadi salah satu makanan khas Betawi. Anda dapat memilih untuk memakan rujak ini dengan Juhi kering atau Juhi basah. Rujak Juhi ini cukup unik, karena tidak seperti rujak-rujak lainnya yang identik dengan sayuran dan buah-buahan, Rujak Juhi justru menggunakan seafood, yaitu sotong sebagai bahan utamanya.<\/p>\n<p>Tambahan bahan lain berupa potongan timun, selada, irisan kol, mie dan juga kentang yang kemudian ditata di atas piring dan disiram menggunakan saus kacang yang berwarna coklat peklat. Untuk rasa bumbunya sama dengan bumbu gado-gado, yaitu pedas, gurih dan sedikit asam karena terdapat tambahan cuka.
