Hampir seluruh masakan Indonesia kaya akan bumbu yang berasal dari rempah-rempahnya yang beragam. Meskipun demikian, keberagaman jenis kuliner yang ada di Indonesia tidak lepas dari pengaruh budaya dan globalisasi kuliner yang berasal dari negara lainnya, seperti Tiongkok, India dan Eropa.<\/p>\n\n\n\n<p>Fadly Rahman pengarang buku \u201cRijstaffel\u201d &amp; \u201cJejak Rasa Nusantara\u201d menyebutkan, pengaruh pangan bukan hanya dari jenis masakan yang ada, tetapi dari teknik memasak, alat dan bahan-bahan juga memberikan pengaruh besar terhadap beragamnya kuliner Nusantara.<\/p>\n\n\n\n<p>Ini terbukti bahwa sejarah dan kekayaan kuliner nusantara banyak didokumentasikan, seperti yang ada di dalam Naskah Jawa Serat Centhini (12 jilid) yang disusun dari tahun 1814-1823. Bahkan Raden Ajeng Kartini di masa hidupnya sudah mencari jejak-jejak perkembangan Gastronomi di Hindia Belanda, dan menyusun sebuah buku resep beraksara Jawa yang diperuntukkan bagi para perempuan pribumi, yaitu Kokki Bitja.<\/p>\n\n\n\n<p>Literatur kuliner Indonesia dari masa ke masa menunjukkan perkembangannya, entah dari masa kolonial, setelah kemerdekaan, hingga masa kontemporer.
