Pengolahannya mudah, pas dipraktikkan di rumah.<\/p>\n<p>Lodeh merupakan salah satu menu rumahan bersantan. Subagio Johanes, executive chef Batiqa Hotel Darmo Surabaya, menuturkan, hidangan tersebut memiliki kuah santan yang encer dan bumbu ringan. Berbeda dengan kuah sayur bersantan lainnya. Jo -sapaan Subagio- mengkreasikan lodeh dengan salmon. Menurutnya, ikan laut itu memiliki rasa yang khas dan tidak amis.<\/p>\n<p>&#8220;Di resep ini, saya pakai salmon Norwegia. Warna dagingnya merah muda dan tidak mencolok seperti salmon Alaska. Dagingnya lebih kenyal dan padat,&#8221; paparnya. Jo menjelaskan, rasa salmon juga tak &#8220;mengalahkan&#8221; kuah khas lodeh. Berbeda jika menggunakan jenis pindang atau tuna. Supaya lebih klop dengan ikan, santan di kuah lodeh diganti dengan cooking cream.<\/p>\n<p>Chef yang juga menguasai tanaman obat tradisional itu melanjutkan, paduan cooking cream membuat kuah lebih creamy. Jo juga memperkaya rasa dengan paduan bumbu dasar merah dan kuning khas Nusantara. &#8220;Teksturnya semilikuid. Tidak sekental saus, tapi lebih thick dari kuah lodeh biasanya,&#8221; terangnya. Meski memiliki tampilan &#8220;berat&#8221;, rasa kuah salmon lodeh tetap ringan.<\/p>\n<p>Jo mengatakan, masakan khas Indonesia memiliki rempah yang kuat, namun tak mendominasi. Jadi, bisa dipadukan dengan bahan nonlokal. Dengan sedikit modifikasi, menu itu pun mudah diterima oleh lidah banyak orang. &#8220;Masakan kita sangat bisa go international, kok,&#8221; imbuhnya. Untuk bumbu kuning, gunakan kunyit. Bumbu harus ditumis hingga matang sebelum disimpan.<\/p>\n<p>CARA MEMBUAT<\/p>\n<ol>\n<li>Didihkan air, lalu rebus sayur selama 1-2 menit. Tiriskan, kemudian rendam di air dingin.<\/li>\n<li>Goreng tahu dan tempe hingga cokelat keemasan, sisihkan.<\/li>\n<li>Panaskan pan, beri sedikit minyak. Pan seared salmon mulai dari sisi yang berkulit selama 2-4 menit. Balik, panggang sisi lainnya hingga matang merata. Sisihkan.<\/li>\n<li>Tumis bumbu merah dan bumbu kuning, masing-masing satu sendok makan. Setelah wangi, tambahkan air. Aduk rata.<\/li>\n<li>Masukkan cooking cream, lalu campur. Bumbui dengan garam dan lada secukupnya.<\/li>\n<li>Tambahkan tempe, tahu, dan sayuran yang telah di-blanch dalam kuah. Masak hingga kuah sedikit menyusut.<\/li>\n<li>Sebelum mematikan api, masukkan salmon yang telah di-pan seared.<\/li>\n<li>Penyajian: siapkan mangkuk. Tata sayur, tambahkan salmon di bagian atas. Tuangkan kuah lodeh. Lalu, sajikan dengan nasi hangat, sambal, dan kecap.<\/li>\n<li>Salmon bisa diganti dengan ikan lain. Untuk rasa yang lebih lembut, kakap putih atau merah bisa digunakan. Sementara itu, yang menggemari rasa rich bisa memilih black cod.<\/li>\n<li>Sebelum di-pan seared, salmon tidak perlu dimarinasi. Cukup bersihkan, lalu panggang di pan.<\/li>\n<li>Jika menginginkan bumbu kuning yang berwarna lebih pekat, bakar kunyit sebelum diolah.<\/li>\n<li>Takaran cooking cream bisa ditambah atau dikurangi hingga mendapatkan tekstur semilikuid.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Sumber: Jawa Pos 8 Agustus 2021.
