Hal. 22<\/p>\n<blockquote><p>Perpaduan rempah khas Tiongkok dengan kikil sapi yang lembut memberi cita rasa kuliner oriental yang nikmat. Angsio kikil sapi bisa jadi ide hidangan untuk keluarga di Tahun Baru Imlek.<\/p><\/blockquote>\n<p><strong>KULINER<\/strong> khas Tiongkok pada umumnya banyak menggunakan daging babi untuk dimasak dengan teknik angsio. Kali ini Dede Sundana,<em> sous chef<\/em> Grand Swiss-Belhotel Darmo Surabaya, mengkreasikannya dengan kikil atau bagaian dari kaki sapi.<\/p>\n<p>Untuk mendapatkan warna kemerahan khas angsio, kaki sapi itu dimasak dengan bumbu tertentu. &#8220;Sebelum digoreng, dikasih <em>soy sauce<\/em> dan sedikit pewarna makanan sampai kikilnya berubah warna merah,&#8221; ujarnya.<\/p>\n<p>Step awal, rebus kikil sapi terlebih dulu selama 2 jam. Hasilnya, kikil masih setengah matang dan belum lunak. Sebab, ia masih akan melalui dua tahap memasak lagi. Agar bau perengusnya hilang, tambahkan jahe dan daun bawang pada air rebusan. &#8220;Kalau direbus sampai lunak, nanti hancur teksturnya saat dimasak bareng kuahnya,&#8221; lanjut <em>chef<\/em> Dede.<\/p>\n<p>Angkat apabila sudah tampak merekah. Kikil sapi yang berubah merah kemudian digoreng sebentar hingga kulitnya kering. Selanjutnya, masak kembali bersama kauh selama 3 jam. &#8220;Setelah 3 jam, tekstur kikilnya sudah lunak,&#8221; tambahnya.<\/p>\n<p>Warna dari berbagai komponen sayur dalam kuah pun lebih keluar setelah dimasak lama. Rasanya asin gurih dengan harum cengkih dan kayu manis.
