Juara kompetisi Top Chef 2020 itu meramu sup jamur dengan cara tradisional Prancis. Tapi, dipadukan dengan bumbu nusantara seperti serai dan jahe.<br \/>\n&#8220;Bahan rempah di Indonesia sangat beragam dan bisa dipadukan dengan resep tradisional Prancis,&#8221; papar Chef David pada acara kolaborasi UC dan Institut Francais Indonesie (IFI) itu. David menyebut, dia terkesan dengan kunjungannya ke Indonesia. Terlebih, dia bisa demo langsung memasak dengan teknik tradisional ala Prancis yang sudah terkenal. &#8221; Sayaa kan berkunjung kembali ke Indonesia,&#8221; tuturnya. Vice Head Culinary Business Program UC Surabaya Moses Soediro mengatakan, kegiatan itu membuat mahasiswa semakin mengenal French cooking technique. Teknik memasak yang sudah banyak dikenal sejak lama di dunia kuliner internasional karena berbagai keunggulannya. Mulai dari pemilihan bahan, proses memasak yang cermat hingga kandungan gizi pada bahan makanan tidak banyak yang hilang. &#8220;Bahan masak yang dipilih yakni <em>plant based food<\/em>,&#8221; tuturnya. Makanan yang dimasak menggunakan teknik tersebut akan terlihat dari warna sayur tidak banyak berubah. &#8220;Proses pematanganya merata,&#8221; ujarnya. Di Surabaya Barat yang banyak menggunakan teknik tersebut di antaranya restoran steak.
