Menu klasik Prancis yang khas untuk momen spesial Natal itu memiliki cita rasa renyah sekaligus lembut dan creamy.<\/p>\n<blockquote><p><strong>SALMON<\/strong> en croute merupakan salah satu elegant cuisine yang kerap disajikan saat perayaan Natal. Menu klasik Prancis itu cukup kompleks. Executive Chef Whiz Luxe Hotel Spazio Surabaya Randy Unggul menuturkan, ada teknik khusus yang perlu diperhatikan dalam hal menggulung serta membuat salmonnya matang, tapi pastry-nya tidak gosong.<\/p><\/blockquote>\n<p>Sebab, keduanya memiliki durasi matang yang berbeda.&#8221; Low heat di oven akan membuat puf pastry tidak mengembang. Maka, gunakan temperatur 180 derajat selama 15-18 menit untuk mematangkan pastry nya terlebih dulu,&#8221; ujar chefRandy.<\/p>\n<p>Setelah itu, keluarkan dan angkat dari loyang. Jangan langsung dipotong. Sebab, daging salmon belum matang. Resting selama kurang lebih 10 menit. Panas yang masih terperangkap di dalam gulungan akan memasak salmon secara perlahan. &#8220;Itu kenapa ujung gulungan perlu dikunci. Supaya panas tidak bisa keluar,&#8221; sambungnya.<\/p>\n<p>Cara menggulungnya mirip cara menggulung sushi. Ditarik kedepen, ditekan ke belakang, kemudian diputar lagi ke depan. Isian jamur dan bayamnya bisa dikurangi agar lebih mudah menggulungnya dan<br \/>\nhasilnya rapi.<\/p>\n<p>Salmon en croute semakin spesial den gan isian bayam cream cheese dan jamur duxelles. Yakni, jamur yang dicincang halus dan dimasak bersama bawang putih serta white wine hingga aimya habis. &#8220;Kalau mash ada airnya, nanti sulit menggulungnya. Begitu pun dengan bayamnya, tiriskan dulu,&#8221; ujar chefRandy.<\/p>\n<p>Perpaduan itu menghasilkan cita rasa yang creamy. Cocok dengan juicy salmon dan puff pastry yang renyah. Menu spesial Natal Whiz. Luxe itu makin komplet disandingkan dengan cocolan saus lemon butter dan hollandaise.
