Karena kita memanfaatkan seluruh serat sayuran dan tanpa penggorengan. Sehingga keripik sayur asem kita jauh lebih sehat untuk dikonsumsi,\u201d ujar Devina, Rabu (10\/12\/2025).<\/p>\n<p>Bahan seperti labu siam, jagung, kubis, dan campuran oat dihaluskan, lalu diberi bumbu gula Jawa, asam Jawa, serta bumbu sayur asem.<\/p>\n<p>Adonan kemudian dicetak dan dikeringkan selama 20 jam di suhu 80\u00b0C menggunakan mesin dehydrator. Metode ini menjaga keripik tetap renyah tanpa minyak sambil mempertahankan kandungan vitamin dan serat.<\/p>\n<p>\u201cKami ingin menciptakan camilan yang lebih sehat, tetap menggugah selera, tapi tidak menghilangkan rasa asli sayur asem,\u201d tambah Devina.<\/p>\n<p><strong>Alasan Memilih Format Keripik<\/strong><\/p>\n<p>Ia juga menyebut kebiasaan masyarakat Indonesia yang gemar ngemil sebagai alasan memilih format keripik agar lebih mudah diterima pasar.<\/p>\n<p>Meski tampak sederhana, proses pengembangan produk ini tidak berjalan mulus.<\/p>\n<p>Melvina menuturkan mereka harus melewati banyak percobaan untuk menemukan komposisi terbaik.<\/p>\n<p>\u201cButuh banyak percobaan sampai kami menemukan komposisi paling pas,\u201d ujarnya.<\/p>\n<p>Dalam satu takaran saji 20 gram, keripik ini mengandung energi 20 kkal, karbohidrat 4 gram, dan natrium 160 mg. Kandungan serat alami dari sayuran tetap terjaga karena seluruh bahan diolah dan dikeringkan tanpa minyak.<\/p>\n<p>Keunikan konsep dan rasa membuat inovasi ini mencuri perhatian juri internasional.<\/p>\n<p>Dari puluhan peserta dari Korea, Malaysia, Filipina, hingga Indonesia, produk ini lebih dulu masuk 10 besar sebelum lolos ke posisi Top 4.<\/p>\n<p>\u201cLomba ini jadi langkah awal bagi mahasiswa untuk mengeksplorasi potensi makanan Indonesia,\u201d ungkap Kaprodi Teknologi Pangan UC, Mitha Ayu Pratama Handojo, S.TP., M.Sc.<\/p>\n<p>Mitha menilai penggunaan sayur asli yang diolah menjadi keripik padat serat menjadi keunggulan utama yang membuat produk tersebut menonjol.<\/p>\n<p>\u201cTerobosan penggunaan sayur asli dalam bentuk keripik sehat adalah sesuatu yang semakin dicari pasar global,\u201d ujarnya.<\/p>\n<p><strong>Dipasarkan Lewat Media Sosial<\/strong><\/p>\n<p>Kini, keripik sayur asem berbentuk bulat itu mulai dipasarkan melalui media sosial dengan sistem pre-order. Satu kemasan berisi 20 gram dijual seharga Rp25.000.<\/p>\n<p>Meski masih skala kecil, permintaan datang rutin tiap bulan.
