Indonesia? Kita punya banyak rasa khas, dan sayur asem adalah salah satu yang paling ikonik,\u201d ujarnya.<\/p>\n<p>Hasilnya adalah camilan berbentuk bulat dan tipis yang renyah, sehat, serta kaya serat, kaya sayur, tapi tetap \u201cnge-snack banget\u201d.<\/p>\n<p id=\"teknologi-pangan-bertemu-tradisi-semua-serat-sayur-diolah-tidak-ada-yang-terbuang\"><strong>Teknologi Pangan Bertemu Tradisi, Semua Serat Sayur Diolah, Tidak Ada yang Terbuang<\/strong><\/p>\n<div class=\"photo\"><\/div>\n<p>Keistimewaan camilan ini tidak hanya pada rasanya yang kecut-segar seperti sayur asem, tetapi juga metode pengolahannya:<\/p>\n<p>Seluruh bahan sayur digunakan tanpa limbah: labu siam, jagung, dan kubis dihaluskan bersama oat.<\/p>\n<p>Tanpa minyak: keripik dikeringkan 20 jam pada suhu 80\u00b0C dengan mesin dehydrator.<\/p>\n<p>Serat alami tetap utuh, vitamin terjaga.<\/p>\n<p>Devina menjelaskan bahwa tantangan terbesar ada pada keseimbangan tekstur dan bumbu.<\/p>\n<p>\u201cKami ingin keripik tetap renyah, tapi rasa sayur asemnya tidak hilang. Segar, sedikit asam, tapi tetap gurih,\u201d jelasnya.<\/p>\n<p>Keripik ini hanya mengandung 20 kkal per 20 gram, dengan serat tinggi dan tanpa minyak, menjadikannya camilan sehat yang cocok untuk diet.<\/p>\n<p id=\"berawal-dari-eksperimen-biasa-berbuah-prestasi-internasional\"><strong>Berawal dari Eksperimen Biasa, Berbuah Prestasi Internasional<\/strong><\/p>\n<p><span>Sebelum hadirnya keripik sayur asem, tim ini sempat bereksperimen membuat keripik stroberi, nanas, hingga jagung.<\/span><\/p>\n<p>Namun dorongan menciptakan rasa yang benar-benar \u201cIndonesia banget\u201d membawa mereka kembali ke hidangan Nusantara.<\/p>\n<p>Saat melihat peserta Korea Selatan membawa produk kimchi, mereka semakin yakin: Indonesia pun harus tampil dengan rasa kebanggaannya sendiri.<\/p>\n<p>Perjuangan mereka membuahkan hasil. Dari puluhan peserta dari Korea, Malaysia, Filipina, hingga Indonesia, Oat Chips Sayur Asem melaju ke 10 besar, lalu masuk Top 4 SIAL Innovation, sebuah capaian langka bagi mahasiswa.<\/p>\n<p>\u201cPenggunaan sayur asli sebagai keripik sehat adalah terobosan yang kini dicari pasar global,\u201d puji Kaprodi Teknologi Pangan UC, Mitha Ayu.<\/p>\n<p id=\"laris-di-media-sosial-siap-dipatenkan\"><strong>Laris di Media Sosial, Siap Dipatenkan<\/strong><\/p>\n<p>Meski diproduksi skala kecil, keripik ini kini mulai dijual melalui media sosial dengan sistem pre-order. Harganya: Rp25.000 per kemasan 20 gram.<\/p>\n<p>Saat dipamerkan di Jakarta, permintaan melonjak hingga mencetak omzet dua digit. Ketiganya kini tengah mengurus paten produk dan menyiapkan varian rasa baru untuk memperluas pasar.<\/p>\n<p>\u201cIni bukan sekadar keripik, tapi cara kami memperkenalkan kekayaan rasa Indonesia ke dunia,\u201d ujar Cindy.<\/p>\n<p id=\"generasi-muda-inovasi-besar\"><strong>Generasi Muda, Inovasi Besar<\/strong><\/p>\n<p>Kisah tiga mahasiswa ini membuktikan bahwa kreativitas, teknologi pangan, dan kecintaan pada kuliner lokal bisa melahirkan produk berkelas global.<\/p>\n<p>\u201cInovasi ini hanyalah langkah awal.
