Tiga siswa Tristar Culinary Institute mencoba menghidupkan menu khas dengan berinovasi. Yonathan Wellyanto, Abigail Gabriella dan Leonardo Aldy Mahat menambahkan interpretasi mereka terhadap menu-menu lama <em>Chinede food<\/em>.<\/p>\n<p>Salah satunya, kreasi Yonathan, 20, berupa tim ikan kerapu masak arak dengan lemon dan puding vla. Ikan memang punya tempat khusus bagi peranakan Tionghoan di Indonesia. Selain menandakan kelancaran rezeki, ikan menjadi sajian khas masyarakat pesisir. Meski begitu, saat ini mulai jarang ada ikan yang dimasak secara tim dengan arak.<\/p>\n<p>Ada alasan atas keengganan mengonsumsinya. Aroma kuat bawang putih tidak terlalu disukai. Belum lagi kehadiran arak yang membuatnya sedikit pahit. Agar bisa dikonsumsi secara halal, arak bisa diganti kecap asin dan perasan jeruk limau, \u201cSelain itu, saya kasih lemon agar rasanya lebih lembut. Lalu, didampingi dengan puding vla supaya masakan panas bertemu pencuci mulut yang dingin,\u201d ungkapnya.<\/p>\n<p>Berbeda dengan yang dilakukan Gaby, sapaan Abigail. Dara yang merantau dari Jakarta sejak dua tahun lalu itu justru menggabungkan dua menu wajib Tionghoa di Indonesia. Jeruk dan lapis legit. Dia menjelaskan bahwa jeruk mempunyai arti sebagai pembawa rezeki karena pengucapannya sama dengan aksara Mandarin untuk emas.<\/p>\n<p>Digabung dengan kue yang memuat doa agar rezeki bisa berlapis, Gaby berharap efek yang ditimbulkan berkali-kali lipat. \u201cRasa manis lapis legit dicampur dengan asamnya jeruk cocok banget untuk anak muda. Jadi, enggak terlalu enek,\u201d tuturnya.<\/p>\n<p>Hidangan yang dibuat Leonardo justru yang paling tradisional. Telur teh, menurut dia, merupakan warisan yang makin jarang dijumpai, tetapi cocok dengan anak muda. \u201cSaya rasa ,emu yamg satu ini perlu dicoba generasi milenial. Memang pembuatannya agak rumit, tapi rasa akhirnya sangat khas,\u201d katanya.<\/p>\n<p>Leo menambahkan, masyarakat kian memilih yang serba instan. Kebanyakan membeli makanan ketimbang memasak sendiri. \u201cPadahal, masakan seperti bihun atau misoa juga punya daya tarik sendiri.
