Mereka membuat restoran Jepang Hachi-Bara di Lantai 1 Resto Universitas Ciputra Surabaya<\/p>\n<p>MAHASISWA Universitas Ciputra (UC) meluncurkan restoran Hachi-Bara sejak 29 Januari 2020. Selayaknya mendirikan restoran mereka harus menyiapkan segala sesuatu hingga resto itu berdiri dan siap melayani.<\/p>\n<p>Segala konsep mulai dari dekorasi, makanan hingga packaging diatur mahasiswa. Mereka harus mandiri meski tetap ada dosen pendamping.<\/p>\n<p>Liliana Natadjaja, dosen dan pembimbing Jurusan Culinary Business UC mengatakan, dosen memberi waktu kepada mahasiswa dalam menentukan ide, servis, manajemen restoran, hingga menu. Ada 41 mahasiswa yang praktik dengan berbagai job desk. Dari akhtivitas itu, mereka mendapat penilaian dari dosen pembimbing melalui berbagai aspek selama praktik berlangsung.<\/p>\n<p>\u201cPenilaiannya sangat banyak. Misalnya, pada penilaian servis, bagaimana attitudenya. Ada juga penilaiaan tentang cara masakan yang dihidangkan apakah konsisten atau tidak dan masih banyak penilaian lainnya,\u201d sambung Liliana akhir pekan lalu.<\/p>\n<p>Stevarus Daniel Wirawan selaku General Manager dari Hachi-Bara menuturkan, mreka membuka Hachi-Bara selama Rabu hingga Jumat mulai pukul 09.00-16.00. Khusus Kamis, dibuka pukul 10.00 karena mereka ada kuliah pagi.<\/p>\n<p>\u201cKami menghabiskan Rp 200 juta untuk open resto ini. Kami diberi waktu dua bulan. Meski demikian sebenarnya hari efektifnya 21 hari. Selama waktu itu kami dituntut memiliki satu menu baru setiap minggu agar pengunjung tidak bosan,\u201d kata Daniel.<\/p>\n<p>Konsep Jepang dipilih karena alasan mendobrak market Jepang yang ada di UC. Dari data yang mereka peroleh, makanan Jepang sedang digemari terutama oleh mahasiswa.<\/p>\n<p>Hachi-Bara ini merupakan resto Jepang yang memiliki menu dengan harga yang sanga terjangkau. Mereka juga berhitung calon pengunjung restonya kebanyakan mahasisiswa karena dibuka di kampus. Meski demikian, resto itu juga terbuka untuk umum.<\/p>\n<p>\u201cKami beri harga makanan maksimal Rp 35 ribu untuk menu salmon mentai. Itu pun karena harga ikan salmon mahal. Selain menu itu semua harga dibawah harga salmon,\u201d kata Daniel.<\/p>\n<p>Di sisi lain, para mahasiswa sempat kesulitan dalam menentukan ide dan packaging. Mereka ingin bekerja total agar hasilnya optimal.<\/p>\n<p>\u201cMemang di awal kami merasa kesulitan saat menentukan ide jepang ini akan seperti apa dan bagaimana sampai packaging-nya seperti apa,\u201d kata Daniel.<\/p>\n<p>Akan tetapi, mereka berhasil menentukan karena selalu berkomunikasi dan mencari solusi bersama. Bagi Daniel dan kawan-kawannya, itu kebanggaan saat mereka berhasil melewati kesulitan pertama itu. Setelah itu, mereka menemukan konsep yang digagas bersama. Mahasiswa mengaku sangat senang karena dapat mencicipi dunia bisnis dengan langsung terjun bekerja dalam membuat dan mengonsep resto.<\/p>\n<p>\u201cKami menjadi tahu bagaimana rasanya membuka resto, karena kami juga sudah dua tahun kuliah bareng-bareng jadi kami enjoy saja kerja bareng. Professional kalau pas waktunya kerja, bercanda kalau ada pas waktu luang,\u201d ungkap Daniel.<\/p>\n<p>Hachi-Bara resto ini mampu menarik ratusan pelanggan setiap hari, mereka bisa meladeni hingga 200 porsi per hari.<\/p>\n<p>\u201cTadi saya makan Chicken Kari Katsu. Over all secara rasa enak, harganya juga terjangkau, kebetulan baru kali ini juga nyobain makanan jepang di restoran Universitas Ciputra,\u201d kata Erris pelanggan yang makan siang di Hachi-Bara.
