Bahkan, <\/strong><strong>tanggal 28 Mei diperingati sebagai National Brisket Day oleh warga <\/strong><strong>di negara bagian tersebut.<\/strong><\/p>\n<p>BRISKET adalatt bagan daging sapi yang berasal dari dada bawah dan sekitar ketiak Bagian itu paling alot sehingga cara masak yang palingtepat adalah diasapi <em>(smoked).<\/em><\/p>\n<p>Untuk menghasikan saian <em>smolced busket <\/em>terbadk, <em>pionaster <\/em>asal Surabaya, Senna Satrio, mengurskapkan bahwa brisket terbaik bisa didapatkan dari rumah pemotongan hewan (RPH). &#8220;Ka:au kita beli di pasar,dagingnya sudah tidak beraturan. Jadi, lebih baik bicara dan minta tolong potong langsung sama tukang jagalnya,\u201d katanya pada Kamis (8\/10).<\/p>\n<p>Brisket yang diperoleh dari RPH juga sebaiknya utuh dalam satu potongan agar bagian lemaknya mudah dipisahkan. Satu loaf daging brisket biasanya memiliki berat 4-7 kilogram (kg). Ada juga yang beratya mencapai 7-8 kg. Harganya sekitar Rp 600 ribu hingga Rp 1 juta. Nanti, setelah bagian lemak dad brisket itu disisihkan, biasanya berat daging akan menyusut sekitar 25 persen.<\/p>\n<p><em>\u00a0<\/em><em>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Founder <\/em>Coyote Hats BBQ bersama Nyoman Madya tersebut menggunakan dagIng sapi Australia. Dia memasak daging tersebut dalam kurun waktu cukup lama, yakni 12 jam. Waktu 12 jam itu bisa dimanfaatkan untuk memasak seldtar 15 kg brisket dengan alat <em>offset smoker buatannya.<\/em><\/p>\n<p>Lemak hewani <em>(tallow) <\/em>yang dikeluarkan dari daging brisket bisa dipakai untuk kondimen saat penyajlan. Misalnya, untuk menggoreng kentang atau membuat saus pelengkap. &#8220;Jadi, dari brisket lni, ampasnya pun masih bermanfaat,\u201d ungkapnya.<\/p>\n<p>Dalam pengasapan, Senna mengadaptasi <em>teknik fire management <\/em>dari Aaron Franklin, seorang <em>pitmaster <\/em>dari Texas. Kayu bakar dalam tungku dltata semedikian rupa agar suhu dalam tungku sesuai dengan yang dlharapkan dan sirkulasi udaranya tetap baik. Senna menggunakan kayu apel dari Batu yang aromanya khas. Kayu pohon apel ttu mempunyal diameter yang tidak terlalu kecll dan tidak terlalu besar. &#8220;Sekitar 10 sentimeter (cm). Jadi, kayu bakarnya juga jangan terlalu kecil karena bakal berpengaruh ke apinya,\u201d jelas alumnus\u00a0 Desain Komunikasi Visual (DKV) Universitas Ciputra (UC) tersebut.<\/p>\n<p><em>\u00a0<\/em><em>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Pitmaster <\/em>sekaligus patner Senna di Coyote Flats BBQ, Insan Kamil, menjelaskan, ketika <em>smoked brisket <\/em>sudah matang, pemotongannya harus dllakukan dengan hati-hati. &#8220;Saat memotong bagianfiat (bagian yang penuh daging), kita bisa potong sejurus dengan serat dagingnya. Tapl, ketika memotong bagian <em>point <\/em>(baglan yang bercampur dengan lemak), harus hati-hati karena seratnya lebih tidak beraturan seperttipada bagian flat,\u201d paparnya.<\/p>\n<p>Selama setengah hari, Senna dan Dodo -sapaan akrab Insan Kamil memasak <em>smoked brisket. <\/em>Mereka mengisi waktu sambll <em>ngobrol <\/em>dan <em>ngopi. <\/em>Sebab, kalau memasak <em>smoked <\/em>brisket sendirian dia bisa bosan dan mengantuk &#8220;Selain ada waktu luang, kita harus sabar dan kalau <em>bisa ono koncone (ada <\/em>temannya, Red); tandas Serna. <strong>(rin\/c14\/da)<\/strong><\/p>\n<p><strong>Sumber: Jawa Pos. 11 Oktober 2020.
