Kali ini soto Betawi dikreasikan dengan keju oles, menambah gurih dan creamy. Cocok jadi sajian hang t buat keluarga di malam\u00a0tahun\u00a0baru.<\/p>\n<blockquote><p><strong>KREASI<\/strong> ala chef Tian kali ini menggunakan kuah kuning, sedikit berbeda dengan soto Betawi umumnya yang memiliki tipe kuah putih kental dari santan atau susu. &#8220;Saya tambahkan keju oles. Kalau mau kuah putih, tinggal hilangkan kunyitnya,&#8221; ujarnya.<\/p><\/blockquote>\n<p>Kuah kaldunya menggunakan air rebusan daging dan jeroan sapi. Triknya supaya tidak bau, rebus sebanyak tiga kali. Rebusan pertama cukup 10 menit untuk menghilangkan kotoran.<\/p>\n<p>&#8220;Buang air rebusan, cuci daging dan jeroan, rebus kembali, bekas airya buang lagi. Rebusan yang ketiga baru ditambah rempah-rempah,&#8221; beber chef Tian. Yaitu, Bawang putih, serai, jahe, dan lada. Ditambah lagi ketumbar, kemiri, pala, kunyit, kayu manis yang dihaluskan dan ditumis.<\/p>\n<p>Tambahkan keju oles pada kuah kaldu dengan perbandingan 1:3. Pada resep itu, 500 gram keju oles untuk 1,5 liter kaldu. &#8220;Jika ingin tidak terlalu kental, perbandingan antara keju oles dan kuah kaldu bisa 1:4,&#8221; imbuhnya saat mengisi cooking demo bersama Prochiz di TBK Delapan Raya Prapen pada Kamis (12\/12). Santan opsional boleh dihilangkan sesuai selera.<\/p>\n<p>Keju memberikan cita rasa baru yang lebih creamy pada kuah soto. Saj ikan soto Betawi selagi hangat dengan tambahan jeruk nipis, acar, sambal, emping melinjo, lontong, atau nasi sebagai pelengkap.
