Setelah itu kita campur dengan oat, gula jawa, dan asam jawa,\u201d ujar Devina.<\/span><\/p>\n<p><span>Menurutnya, penggunaan\u00a0<\/span><span>gula jawa dan asam jawa<\/span><span> sengaja dipertahankan agar identitas rasa sayur asam tidak hilang.<\/span><\/p>\n<p><span>\u201cKita tidak menghilangkan khas Indonesianya. Setelah semua tercampur, produk kita keringkan menggunakan dehidrator, jadi tidak menggunakan minyak sama sekali,\u201d tambahnya.<\/span><\/p>\n<p><span>Agar nutrisi tetap terjaga, proses pengeringan dilakukan dengan suhu rendah.<\/span><\/p>\n<p><span>\u201cPengeringannya di suhu sekitar 80 derajat Celcius selama kurang lebih 20 jam, supaya serat dari sayurnya tidak hilang,\u201d jelas Devina.<\/span><\/p>\n<p><span>Adapun jenis sayuran yang digunakan dalam keripik sayur asam ini di antaranya\u00a0<\/span><span>kubis, jagung, dan labu siam<\/span><span>, yang merupakan bahan utama dalam hidangan sayur asam tradisional.<\/span><\/p>\n<p><span>Devina mengungkapkan, tantangan terbesar dalam pengembangan produk ini terletak pada peracikan rasa yang seimbang.<\/span><\/p>\n<p><span>\u201cSayur asam itu satu hidangan yang kompleks. Rasa manis dan asamnya harus pas, dan juga tidak boleh terlalu berat saat dijadikan chips,\u201d ujarnya.<\/span><\/p>\n<p><span>Menariknya, seluruh proses\u00a0<\/span><span>trial and error<\/span><span>\u00a0hanya dilakukan dalam waktu\u00a0<\/span><span>satu minggu<\/span><span>, karena harus berbagi fokus dengan persiapan produk lain untuk SIAL 2025.<\/span><\/p>\n<p><span>\u201cWaktu kami sangat mepet. Akhirnya kami membagi tim, satu orang fokus trial, dua orang produksi varian lain. Tapi puji Tuhan, dalam satu minggu keripiknya berhasil jadi,\u201d paparnya.<\/span><\/p>\n<p><span>Meski terdengar tidak biasa, keripik sayur asam justru mendapatkan sambutan positif dari para pengunjung pameran SIAL Interfood 2025.<\/span><\/p>\n<p><span>\u201cAwalnya banyak yang merasa aneh karena baru pertama dengar keripik sayur asam. Tapi setelah dicoba, mereka bilang rasanya unik dan tetap terasa seperti sayur asam aslinya,\u201d ungkap Devina.<\/span><\/p>\n<p><span>Melihat respons yang baik tersebut, tim mahasiswa UC ini kini mulai mengembangkan varian rasa baru untuk memperluas pasar.<\/span><\/p>\n<p><span>\u201cKe depan pasti ada variasi lagi, tapi sekarang masih dalam tahap pengembangan,\u201d katanya.<\/span><\/p>\n<p><span>Tak hanya sebatas inovasi kampus, keripik sayur asam ini juga mulai memasuki pasar digital.<\/span><\/p>\n<p><span>\u201cUntuk sekarang kami coba pemasaran lewat Shopee. Promosinya lewat media sosial, seperti poster dan sistem pre-order,\u201d jelas Devina.<\/span><\/p>\n<p><span>Produk ini dipasarkan dengan harga\u00a0<\/span><span>Rp25.000 per kemasan 20 gram<\/span><span>, menyasar konsumen yang menyukai camilan sehat berbasis pangan lokal.<\/span><\/p>\n<p><span>Inovasi ini menjadi bukti bahwa\u00a0<\/span><span>pangan lokal bisa diolah menjadi produk modern, sehat, dan bernilai jual tinggi<\/span><span>, sekaligus membuka peluang bisnis berbasis kuliner Nusantara bagi generasi muda.
