Anggapan ini berhasil dipatahkan oleh sekelompok mahasiswa Program Studi Teknologi Pangan Universitas Ciputra Surabaya (UC\u00a0Surabaya) melalui inovasi kuliner\u00a0unik, Keripik Sayur Asem.<\/p>\n<\/blockquote>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Camilan renyah yang diberi nama d&#8217;vincy Oat Chips rasa sayur asem ini tidak hanya menyajikan cita rasa tradisional Indonesia dalam kemasan modern dan sehat, tetapi juga mengusung semangat keberlanjutan pangan (zero waste).<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Mitha Ayu Pratama Handojo, Ketua Program Studi Teknologi Pangan UC Surabaya, menjelaskan bahwa proyek ini didorong oleh visi untuk membawa produk Indonesia bersaing di kancah global.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">\u201cKami bermain di ranah inovasi yang dirancang internasional. \u201cKalau Korea bisa membanggakan kimchi, kenapa kita tidak bisa membanggakan sesuatu dari Indonesia? Jadi, itu adalah spiritnya,&#8221; ungkap Mitha, Minggu (14\/12\/2025).<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Awalnya, tim yang terdiri dari tiga mahasiswi ini mencoba membuat keripik dari stroberi, nanas, dan jagung. Namun, untuk menemukan keunikan khas Indonesia, pilihan pun jatuh pada sayur asem, hidangan ikonik dengan bumbu yang kaya dan familier.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Keripik Sayur Asem ini, kata Mitha, diciptakan dengan konsep zero waste atau minim limbah, dengan memanfaatkan hampir seluruh bagian sayuran, termasuk sisa-sisa yang biasanya terbuang.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">\u201cKeripik ini terbuat dari semua sayuran yang bisanya ada di sayur asem, seperti labu siam, jagung, dan kubis. Jadi, kita tidak membuang serat. Sayuran yang mulai layu pun tetap bisa dimanfaatkan karena masih bagus untuk diolah,&#8221; jelasnya.<\/p>\n<p><strong>Nol Minyak, Minim Limbah, Tinggi Serat<\/strong><\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Devina Angela Tanurahardja, salah satu anggota tim, menjelaskan bahwa keripik ini dibuat tanpa proses penggorengan, sehingga bisa lebih sehat.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">&#8220;Setiap kemasan 20 gram Keripik Sayur Asem ini mengandung total energi 20 kkal per takaran saji, menjadikannya camilan sehat rendah kalori,&#8221; katanya.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Dalam proses pembuatannya, labu siam, jagung, dan kubis dikukus hingga lunak. Setelah itu, seluruh sayuran dihaluskan, lalu dicampur dengan oatmeal, gula Jawa, dan bumbu asam Jawa.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Adonan kemudian dipanaskan di atas wajan atau pan agar mengental. Sesudahnya, adonan dicetak, kemudian dikeringkan selama 20 jam pada suhu 80 derajat celcius.<\/p>\n<p class=\"text-foreground mb-4 text-base md:text-lg \">Lebih lanjut, kebiasaan masyarakat Indonesia yang gemar mengemil keripik, menjadikannya peluang untuk menghadirkan alternatif camilan berbahan buah dan sayur asli.
